I’m not really a carboholic. I’m more of a sugarholic. I like sweets..the more chocolate in those sweets, the better. However, there is something to be said about the weather changing your eating habits. As the weather continues to flirt with below freezing temperatures, I find myself craving heavier foods. Casseroles and soups have been my addiction the past few weeks. I can’t get enough. Not to mention this is probably one of the busiest times for me professionally, so the easier that carb-loaded meal is to make, the happier I am.

Hearty Soup is probably the easiest recipe Claudia has in her cooking repertoire. It’s so easy that while my Dad watched me and Claudia make this soup for the blog, he proclaimed that even he could make it and continued to copy the recipe for his own meal arsenal for an upcoming hunting trip. Beats his pickled eggs recipe he currently has that’s for sure. This soup is so delicious, it leaves you wondering how something so simple can be so good.

In a large pot, melt the butter.

Place meat in pot and brown.

In the same pot add your water, chicken broth, tomatoes, macaroni and rice.

Next, add your chopped veggies.

Bring to a boil. Reduce temperature to low and simmer for approximately an hour, or until the veggies are nice and tender.

It’s really that simple folks.

You now have amazingly delicious Hearty Soup!

Ingredients
  1. 1 tbsp butter
  2. 2 medium yellow onions, chopped
  3. Salt & pepper to taste
  4. 3 large carrots, sliced
  5. 3 celery stalks, chopped
  6. 1/3 cup white rice
  7. 1 lb ground beef, chicken or turkey (our favourite is ground chicken)
  8. 1 can tomatoes (we used a large can, however you can use a smaller can - again, depending on your love for tomatoes)
  9. 3 cups chicken broth
  10. 3 cups water
  11. 3 medium potatoes, diced (I use red potatoes)
  12. 1/3 cup macaroni
Instructions

    I wish I would have seen this before I did my over budget shop today! That soup looks soo good!!! I would probably add cabbage to it so I could get more roughage. That’s right! I have hit the age where I HAVE to be concerned with ROUGHAGE!

    I have been making this soup for years. It was a staple when we were on a skinny budget. I used beef broth as liquid with hamburger. Now I make it just because hubby & I both love it. I had to whiz the tomatoes in the blender as my kids didn’t like the texture of them. And son wouldn’t eat macaroni so had to leave that out as long as he was at home.

    I just disicovered this recipe on your blog and was just wondering about putting the macaroni in and cooking it so long. Doesn’t it get mushy cooking it that long? Just wondering because I plan on making it. Sounds wonderful. And I like soup any time of the year. Thanks for the recipe

      I don’t find it gets mushy but you can try it both ways and see which suits you the best πŸ™‚
