The original goal of this blog when it was first conceived was for me to learn and document all the amazing recipes that Claudia had in her cookbook. This blog recently turned 1 year old, and I think we’ve done a pretty good job at showcasing some of her best work. However, every now and then Claudia and I come across some fantastic recipes from others that we feel require some showcasing as well. My boyfriend’s Mom is also an amazing baker. There are countless recipes of hers I would love to get my hands on and feature. However, I’ve been told by her that the only way that will happen is if I marry her son. Fair trade off, right?
This Chocolate Zucchini Cake is one of my boyfriend’s favourite recipes from his Mom. He loves this cake so much that he requests that I bake it for him each year for his birthday. I can’t complain…it’s absolutely delicious. If it wasn’t for Claudia’s beloved Skor Cake, I’d be requesting Chocolate Zucchini Cake for my birthday as well.
You will need:
1/2 cup margarine
1/2 cup vegetable oil
1-3/4 cups sugar
2 eggs
1 tsp vanilla
1/2 cup buttermilk
2-1/2 cups flour
4 tbsp cocoa powder
1 tsp salt
1/2 tsp baking powder
1 tsp baking soda
2 cups grated zucchini
1/3 cup chocolate chips
1/3 cup chopped walnuts
Cream margarine, oil and sugar in a large mixing bowl.
Add eggs and vanilla.
Beat well.
In a separate bowl, sift the dry ingredients together.
Add dry ingredients to wet ingredients, alternating with buttermilk.
Mix well until all combined.
Mix in zucchini.
Pour mixture into greased 9 x 13 inch pan.
Sprinkle with chocolate chips and walnuts.
Bake at 325 degrees fahrenheit for 37 minutes, or until a toothpick comes out clean.
Remove from oven and cool on wire rack.
Serve to your lucky guests…
or birthday boy/girl.
Rich and chocolatey.
You can’t taste the zucchini, but you will know it’s there because it makes the cake extremely moist.
Top with vanilla ice cream if desired.
