We had our first official sign of winter today – snow. The dip in temperatures and the cold, wet morning reminded me of my favourite things in life: family, warmth, and comfort foods! This recipe encompasses all three and is a childhood favourite of mine. I don’t know why my brother and I started calling this dish “Mush”, but we did. And it stuck. To this day, with both of us in our 30’s, we continue to call it “Mush”. Actually, so does everybody in my family! This dish is traditionally called Lazy Cabbage Roll Casserole by others because it incorporates pretty much everything in a traditional cabbage roll, without the pain of rolling it into a nice, neat package. This dish is hearty and warm – perfect for the season’s first snowfall. It’s also super easy to make.


In a large saucepan, brown ground beef in your vegetable oil.

Season with salt and pepper.

Chop 1/2 of the onion and add to ground beef.


Cook until beef is completely brown and colourless.

Once beef is browned, remove from heat and place in a roasting pan or deep oven safe pot, like a casserole dish.


In a medium sauce pan, combine rice and 2 cups of water and a pinch of salt.

Bring to a boil then simmer until rice is cooked.


While your rice is cooking, slice your mushrooms if necessary.


In the same saucepan as you cooked the ground beef, melt 1 tbsp butter.


Pour entire bag of cabbage or 1/2 head of cabbage into saucepan.


Season with pepper.


Season with salt.


Chop and place the other 1/2 of the onion in with the cabbage.


Place lid on saucepan to encourage the cabbage to “sweat” faster.


In another saucepan, melt another tbsp butter.


Place sliced mushrooms in pan.

Season with salt and pepper.


Delicious!


Simmer mushrooms until cooked.


Your rice should be done by now. Remove from heat and let stand covered for 5 minutes.


Add to ground beef in roasting pan.


Add your cooked mushrooms to the pan as well.


Once your cabbage is cooked, add it to the roasting pan as well.


Add your 2 cans of tomato soup to the mix.


And mix this casserole up!


Looking good!


If you have opted into having some smokie dogs or chorizo sausage with your mush (like my family), place them on top of the casserole.

My Dad and Brother actually have deer sausage with their Mush.

Claudia and I opt out of that craziness.

Place lid on roaster and cook in a 325 degree fahrenheit oven for 30 minutes.

Viola!

Ingredients

  10. 2-3 of your favourite sausage - like smokie dogs or chorizo (optional)
