It’s not everyday that somebody shows up at my door with a big wheel of cheese. Well, last week Claudia did. And she was proud. She had been wanting to make this appetizer since before Christmas. When she showed up at my door that cold Monday evening, her patience had clearly run out. She couldn’t take looking at the wheel of Brie cheese in her fridge anymore. The thought of it expiring before she had an opportunity to feature this recipe on this blog was too much for her to take. Therefore, she showed up and we made this beauty. It’s rich, buttery, cheesy, sweet and sour all at the same time. Did I mention Claudia also brought a Costco-sized box of crackers to go along with the wheel of cheese? She meant business. I couldn’t say no – and I’m glad I didn’t. This appetizer is absolutely delicious and perfect for any company you may be hosting. You can also cut this recipe in half if you don’t want to purchase a huge wheel of Brie cheese and make enough to feed a small army. But then that wouldn’t be as fun! Finally, a special thank you to Claudia’s coworker, Barb, who gave us this recipe. None of this could have been shared without her.
Please note that this recipe is extremely flexible to your own preferences. If you like more crunch, add more pecans. If you don’t like pecans, use almonds. If you don’t like raisins, use dried cranberries. You get the idea!
If you haven’t already, chop your pecans
Peel your Granny smith apple as well.
Chop into bite-sized pieces
Slightly roll out one sheet of puff pastry.
Place on the bottom of a 10-inch quiche pan or large pie dish.
You need to ensure the dish you use has taller sides.
Place Brie on top of the puff pastry layer.
As you can see, don’t take off the rind of the cheese.
Next, melt your butter in a large sauce pan.
Add brown sugar, raisins and apples to the pan.
Cook until brown sugar is completely melted into a syrup.
Add pecans and mix well.
Remove from heat.
Pour entire fruit and pecan mixture onto the Brie cheese.
Fold edges of puff pastry over the Brie and fruit mixture.
Should look like the image above.
Place second sheet of puff pastry on top of the entire bottom layer.
Ensure the two pieces of puff pastry are pinched together very well. Otherwise, the cheese will leak out and it will be a bit of a mess.
Mix your egg with a splash of water to make an egg wash.
Brush over the entire puff pastry.
Bake in a 375 degree fahrenheit oven for 40 – 45 minutes, or until pastry is golden brown.
Should look like so.
Golden and delicious!
Cut out a slice and place on a plate.
Serve with your favourite crackers.

- 1 package ready to use puff pastry (2 sheets - 450 grams total), thawed
- 1/3 cup unsalted butter
- 1/2 cup raisins
- 1 cup pecans, chopped
- 1 Granny Smith apple, cored, peeled and chopped
- 1 cup firmly packed brown sugar
- 1 - 870 gram wheel of Brie cheese
- 1 egg
