So-called “superfoods” intrigue me. In a mission to bake less and eat healthier, I decided to do some research on quinoa, which has been classified alongside such items as blueberries, turmeric and acai as a superfood.

The texture of quinoa is similar to couscous but has a slight nutty flavour. It is very high in fibre and high-quality protein. In fact, one half cup of quinoa has 14 grams of protein and 6 grams of fibre. With statistics like that, this superfood definitely caught my attention.

This was my first attempt at cooking with it and I couldn’t have been happier with the results. This recipe is adapted from The Curvy Carrot. These quinoa cakes are packed full of flavour and are quite filling. They are also very simple to make. I found poaching the eggs probably the trickiest part of the whole recipe.

In a medium bowl, combine the cooked quinoa, beaten eggs, salt, chives, onion, Parmesan, and garlic, mixing well with a wooden spoon.

Add the bread crumbs to the mixture and stir to mix completely.

Gently form six individual patties with the quinoa mixture, adding more bread crumbs if necessary.

Heat the olive oil in a large sauté pan over medium heat. Add the patties, cover, and cook, about 5 minutes or so, until lightly browned on one side.

Uncover the patties, and flip (VERY gently) with a spatula, cooking uncovered on the opposite side for another 5 minutes or so, or until each side is browned.

Top each patty with some sliced Parmesan cheese and a poached egg.

Garnish with sea salt, pepper, and chives.  Serve immediately.

Ingredients
  1. 2 cups cooked quinoa. at room temperature

  4. 1/3 cup fresh chives, chopped finely, plus more for garnish
  5. 1/2 cup yellow onion, finely chopped
  6. 1/3 cup freshly grated Parmesan cheese
  7. 3 cloves garlic, minced
  8. 1/2 cup bread crumbs, plus more if needed
  9. 1 - 2 tbsp extra virgin olive oil, for frying the patties

  11. Fresh Parmesan cheese, thinly sliced, if desired

    Love the look of that runny yolk oozing a over the quinoa cake…delish! I love to make a quinoa salad with chopped veggies!
