June is my favourite month. Summer is in full swing, dinner and drinks on the patio, and my birthday. Yes, my birthday. It’s truly my favourite holiday. I even take the day off work and treat myself to a sleep in, guilty pleasure TV and perhaps even a spa treatment if I’m able to get in. In my friend group there are three of us who have June birthdays, and we had the opportunity to get together last night to celebrate. I figured it isn’t a true birthday celebration without cake, so I decided to poll my friends to see which flavour cupcake they wanted me to make. Well, with a tie between chocolate and red velvet, I decided to mix it up and make these delicious Chocolate Chip Cookie Dough Stuffed Cupcakes! I chose right – they were a total hit! There were even a couple loud statements claiming they were “the best cupcakes I have ever had!” You can’t get much better than that. These cupcakes are rich, decadent and moist. A total treat for birthday’s, holidays or any day of the week!
Make cupcake batter according to box directions.
Line cupcake pan with cupcake liners and bake according to box directions.
Cool completely on a wire rack.
While the cupcakes are cooling, it’s time to make your cookie dough filling!
Using an electric mixer, cream together the butter and brown sugar at medium speed.
Add your vanilla and beat well.
Add the flour and salt and mix until combined.
Next add the milk gradually until desired consistency is reached. I used 2.5 tablespoons.
Beat mixture until fluffy.
Gently fold in mini chocolate chips.
Chill in the refrigerator until firm.
If you decide to do the cookie garnish, now is the time.
Pinch off quarter-sized pieces of the store bought cookie dough and bake for 8-9 minutes at 350 degrees fahrenheit.
Cool completely on a wire rack.
To fill the cupcakes with the delicious cookie dough, cut a circular shaped portion out of the center of each cupcake.
I used an apple corer and it worked well.
Fill each hole with a chunk of the chilled cookie dough mixture.
Frost cupcakes with chocolate frosting.
I used a piping bag with a Wilton 2D tip.
Garnish with a sprinkle of mini chocolate chips and your mini chocolate chip cookie!

They are so delicious. I used giant cupcake liners, so this recipe yielded 1 dozen cupcakes.

- 1 box yellow cake mix (and ingredients package calls for, such as eggs, milk and oil)
- 1 containers chocolate frosting or homemade chocolate frosting (use 2 containers if you are using a piping bag)
- 1/2 cup unsalted butter, softened to room temp

- 2-4 tbsp milk
