Reason #852 why I love being on vacation: I have the time to meal plan and grocery shop.
This past week I have been enjoying my vacation immensely. I’ve actually been to the grocery store 3 times in 3 days. I love it. I also finally have the time to look through all those cookbooks that I own and am able to meal plan some healthy dinners. This is huge people, huge. This recipe is one of my all-time favs in the healthy department. These Quinoa Burgers are so simple and insanely delicious. Even my Dad loved them. Again, that’s huge! They are filled with warm flavor and crisp veggies. They are also very light. My Dad liking “hippie food” is your biggest reason to try this recipe out in a hurry.
2 cups cooked quinoa
3/4 cup shredded cheddar cheese
1/2 cup low-fat cottage cheese
1 carrot, finely grated
3 eggs
3 tbsp flour
2 green onions or chives
1 /2 tsp sugar
1/4 tsp black pepper
1/4 tsp ground cumin
1/8 tsp salt
1/8 tsp garlic powder
Olive oil for frying
In a large bowl combine the 2 cups of cooked quinoa, cheddar cheese, cottage cheese, carrot, eggs, flour, green onions, sugar, pepper, cumin, salt, and garlic powder.
Should look like so.
Heat a frying pan on medium-low heat along with a couple teaspoons olive oil.
Using a 1/4 cup measuring cup, drop mixture into pan and lightly flatten to 1/2 inch thick.
Fry until golden-brown, about 4 minutes on each side.
Top with Tzatziki and some green onions or chives and serve alongside your favourite veggies!
These are just perfect. Healthy and flavorful.

October 3, 2016 at 9:13 PM (8 years ago)I dredge them in Panko before frying. It adds a crunchiness to them. I hadn’t thought of using Tadzhik sauce as a condiment for quinoa burgers but I loved it.

I sometimes use zucchini (squeezed dry) and sautéed chopped onion. I’m perpetually trying to lose weight so I use fat free cottage cheese and fat free cheddar (no judgement. 😉) but they still come out fantastic! Great to eat on buns or sandwich thins, or just by themselves.
