I am in love with my spiralizer. I took one look at it and I knew we would be soul mates. A couple months ago during my healthy eating quest, I came across Ali and her amazing blog, Inspiralized. If you haven’t had the opportunity to check out her blog, I highly recommend you do. The focus of her blog is to create delicious healthy meals by using her spiralizer. After visiting her blog for the first time, I immediately went to Amazon and bought my very own spiralizer. And it’s worth every penny. And this is coming from a girl who isn’t really into vegetables!
I’ve made quite a few of Ali’s recipes and they are all incredible. The meals are such a healthy game changer for me. I slightly adapted this recipe to include white sweet potatoes and chickpeas (Ali’s recipe calls for white beans). I used chickpeas because I didn’t have white beans in the house. I have since used white kidney beans in this recipe and it’s still super delicious as well. I also used an amazing red wine chorizo sausage from La Grotta, which is a local Mediterranean market here in Winnipeg. I cannot tell you how yummy this dish is. My husband has already requested that we have it again by week’s end! This definitely is a a nice healthier alternative to your traditional comfort food dishes.
You will need:
2 small or 1 large chorizo sausage link, sliced into chunks
1/2 tbsp extra virgin olive oil
2 garlic cloves, minced
1 large sweet potato, peeled, spiralized into thin noodles
1 pinch cayenne powder
¼ tsp smoked paprika
¼ tsp chili powder
salt and pepper to taste
1 cup chickpeas
¼ cup whole parsley leaves, plus 1 tbsp roughly chopped for garnish
Heat a large skillet coated with cooking spray over medium heat.
Once heated, place your chorizo in the skillet and cook through, about 5 minutes.
Transfer cooked chorizo to a plate and set aside.
In the same skillet, add your olive oil.
Next add your garlic.
And then add your sweet potato spirals.
Add your smoked paprika, cayenne, chill powder, salt and pepper.
I found I needed to add a touch more olive oil to my pan. Feel free to do so if you find your potatos are sticking considerably to the bottom of the pan.
Mix well and cover potato spirals with a lid.
Cook for 5-7 minutes, or until your potatoes are cooked.
Ensure you are uncovering the noodles to stir every now and then.
Add chickpeas, whole parsley and chorizo back to the skillet.
Mix well and allow to chickpeas to heat through, about 1 minute or so.
Dish it up and sprinkle your chopped parsley to garnish.
This dish is so incredible.
Full of wonderful flavour and comfort.
Not too bad for being healthy, right?

- 1 tbsp fresh parsley, roughly chopped (for garnish)
- Place a large skillet over medium heat and coat with cooking spray. Once heated, add in the chorizo and cook for 5 minutes or until cooked through.
- Transfer to a plate and set aside.
- Place the skillet back over medium heat and add in the olive oil, garlic and potato noodles. Season with cayenne, paprika, chili powder, salt, and pepper, toss and cover and cook, uncovering occasionally to toss, for 5-7 minutes or until noodles are cooked through.
- Add in chickpeas, whole parsley, chorizo, toss and let cook uncovered for 1 minute or until beans are heated through.
- Transfer to plate and sprinkle chopped parsley to garnish and serve.
