Our Favourite Pumpkin Desserts

One of the only reasons I get excited for autumn is the abundance of pumpkin everywhere. Pumpkin desserts and pumpkin lattes… I honestly cannot get enough! I also live in Canada so I have to try to focus of something positive when the temperatures start to dip and winter is upon us, right? While I am currently perfecting my next pumpkin recipe for the blog (should be posted within the next few days!) I wanted to take the opportunity to compile our favourite pumpkin recipes!

Cheesecake-Filled Pumpkin Cupcakes – These are probably one of the richest cupcakes I’ve ever tasted. And they are absolutely, positively delicious! If you want a substitute for pumpkin pie or pumpkin cheesecake this Thanksgiving, these babies are by far your best bet.

Pumpkin Caramel Dream Cake – It’s simple, rich and full of caramel and pumpkin flavor. Perfect for the season and ooey, gooey good!

Pumpkin Creme Pies – These sandwich cookies are super simple to make and absolutely delicious. The perfect mix of warm spices and sweet cream cheese. They also freeze extremely well, which is good if you can’t manage to finish all 24 cookies this recipe makes! But I’m sure you can give it a good try 🙂

Pumpkin Pie – A classic. No introduction required. This pie is scrumptious, whether you prefer it with whipped cream or ice cream on top.

Pumpkin Pie Ice Cream – This ice cream is creamy, rich and decadent! It literally tastes like pumpkin pie. Absolutely delicious and perfect for holding onto the last bits of summer but embracing autumn flavours.

Pumpkin Scones – Move over Starbucks! These scones are dense and almost exactly like the pumpkin scones you will find at your neighbourhood coffeehouse. The icing is also very flavourful and decadent. I dare you to not lick the spoon!

Pumpkin Snickerdoodles with Vanilla Icing – These beauties are like soft cookie pillows of cinnamon, ginger and nutmeg with a sweet pumpkin-vanilla finish. Absolutely perfect for any autumn day.

Rolo Cheesecake Brownies

I apologize for the lack of posts over the past few weeks. It’s been rather hectic over here. First, we were hit with a terrible winter storm here in Winnipeg. They called it a blizzard in the forecast, but it actually didn’t reach blizzard proportions. It was close though. Then a couple days later, I somehow managed to hurt my back taking down our Christmas tree. Yeah, don’t ask. Needless to say, it rendered me useless and confined to the couch for the better part of a week. Today is the first day I can honestly say I feel much better and am able to move around without shrieking in pain.

The storm and the hurt back taught me a very important lesson about myself: I really dislike being cooped up in the house for days on end. I guess it would have been okay if I was able to stand long enough to get my bake on. Sadly, I wasn’t able to until last night. I wanted to make sure my resurrection into the food blogging world was a good one for you. I think I hit it out of the ballpark with these Rolo Cheesecake Brownies! They are rich and super delicious. They have the perfect balance of sweetness with the salted caramel and dark chocolate. Not to mention the cream cheese and rolo candies! You will not be disappointed when you try this recipe. Best of all – it’s crazy easy!

Cheesecake-Filled Pumpkin Cupcakes

Ever since the I got back from vacation a week ago I can’t stop thinking about pumpkin. Maybe it’s the cooler weather or the leaves changing red, yellow and orange. It could also be the fact that Starbucks is now serving their delicious Pumpkin Spice Latte that has made me obsessed with making anything and everything pumpkin.

Since I have featured 2 of my absolute favourite pumpkin recipes with you already – Pumpkin Scones and Claudia’s Pumpkin Pie – I had to find a new recipe that me and Claudia enjoyed enough to share. Enter Silvana Nardone from Every Day with Rachel Ray and her Cheesecake-Filled Pumpkin Cupcakes. Because there is cream cheese baked inside, these are probably one of the richest cupcakes I’ve ever tasted. And they are absolutely, positively delicious! If you want a substitute for pumpkin pie or pumpkin cheesecake this Thanksgiving, these babies are by far your best bet. Your family and friends will love you for it.
