I am a chocolate chip cookie fanatic. I knew this early on as a child. Whenever Claudia would bake cookies with me growing up, they were always chocolate chip. I think it’s because I would demand this for the sole purpose of eating the cookie dough when she was not looking. I got caught once and there is photographic evidence. Brown Butter Fruit & Oat Cookies

I had to travel to Toronto last week for a work conference. Over the past 10 years Toronto has become one of my favourite places to visit. Not because I actually love the city (I’m still on the fence) but because Denise, my best friend in the whole wide world, lives there. Since I was a little late on sending her a birthday present (it was in February), I decided to bake her some delicious treats to give to her in person. Denise is one of my biggest baking supporters. Although the distance doesn’t really help her taste most of my baking, she continues to encourage me to create delicious treats in hopes she will one day try them. This past weekend was now her time to enjoy!

I was inspired to make these cookies after a visit to my local Starbucks. I was famished and needed a quick pick-me-up. I tried their Fruit & Oat Cookie, fell in love with it, and immediately needed to replicate it. As I have previously stated throughout this blog, I love baking with brown butter and I wanted to do the same with these cookies. They have great texture with the oats and a nice blend of sweetness with the dried cranberries, apricot and raisins. Most importantly, they are Denise approved. You can’t get a better endorsement than that.

Perogies

Today is my Baba’s (Claudia’s Mom) 82nd birthday. There really isn’t a better way to celebrate her life (and Claudia’s essentially) than to post the staple of my Ukrainian childhood (and the best food she ever made) on this day. That being perogies. No one, and I do mean no one, can ever top my Baba’s perogies. They are simply the best. I know there are a lot of you who say the same thing about your own family recipe. But I kid you not, my Baba made and sold hundreds (if not thousands) of dozens of these little nuggets of gold for people just like yourselves after they realized they did not have the best family recipe. Trust me on this one. I grew up on this stuff after all!

Claudia and I spent all Saturday afternoon perfecting the dough and creating dozens of differently filled perogies. We finally came up with what we thought Baba would deem as worthy to share with friends. Perogies are the ultimate comfort food. I have never grown tired of them. My hope is that after trying these for yourself, you won’t either.
