Well, it’s been a minute since my last post. I think a few seasons have passed. I may have missed peach season, but that doesn’t mean we can’t enjoy their deliciousness in the off season.

I realize most recipes call for fresh fruit whenever possible. Here in Canada, it’s a little difficult to get your hands on seasonal fruit. Mainly because it’s cold like winter here 8 months out of the year. I try to modify recipes whenever possible to incorporate more canned fruit. This recipe is no exception. I absolutely love canned peaches. They also maintain their shape and firmness better than fresh or frozen peaches, so they’re perfectly cooked or baked. 

When I was a kid, one of my favourite things to eat when I was sick was canned peaches on toast. The juice from the peaches soaked the toast just enough to make it sweet and delicious! I also enjoyed cutting canned peaches up and mixing it in cottage cheese. Yeah, I was a weird kid. 

In Canada, we typically have canned California cling peaches. The nice thing about these peaches is that they are picked and packed in their own juices, usually within 24 hours to ensure they retain their appearance, texture, delicious flavour and nutritional content. The best part about these particular peaches is that they have no preservatives and are packed in their own juice. I actually find canned peaches so much more flavourful than fresh peaches. You can’t go wrong. 

Now onto our delicious canned peach fritters! 

In a medium-sized bowl, combine flour, salt, sugar, cinnamon and baking powder.

Whisk in eggs, milk and butter.

Using a spatula, gently fold in diced canned peaches. 

Heat canola oil in a large pot (I used a dutch oven) to 375 degrees F.

Depending on how big you want your fritters, ladle 1/4 – 1/2 cup batter into hot oil. 

The batter will sink to the bottom of the pot at first and then float to the top.

Cook for about 2 – 3 minutes, depending on size of fritters.

Remove fritters from oil with a slotted spoon or tongs.

Drain on paper towels to remove any excess oil.

Mix together your icing sugar and milk until smooth.

While your fritters are still warm (you don’t want them to cool very much on the paper towel), drizzle with icing.

Let glazed fritters cool completely on a wire rack.

These are the easiest fritters you will ever make. 

I cannot get over how incredibly delicious homemade doughnuts and fritters are!

The peaches bring out a nice juicy sweetness in the dough.

These California Cling Peach Fritters allow me to not miss summer as much.

Ingredients
  1. 1 cup flour
  2. 1 tsp salt
  3. 1 tsp baking powder
