I’ve been on this super keen health kick for about a month now. Not only is it focusing on the food that I consume, it’s also focusing on spending a bit more time on relaxing and myself.
Quick and Easy Bruschetta Chicken Bake
I can’t believe it’s already the end of October. Where did this year go? I don’t think I’m ready for winter. Where I live, winter lasts about 6 months and is brutally cold. Today, I see the leaves all on the ground right and breathe in the damp cold air and I long for the days a mere 2 months ago of hot sun, warm wind and drinks on the patio. (more…)
Santa Fe Chicken Salad
My friend Carly and I came up with a crazy idea to take a TRX exercise class every Monday night. For those of you who don’t know what TRX workouts entail, here are a couple buzzwords I like to use to describe the exercises: absolute hell, pain, and regret. I’m only half kidding. The workouts consist of using your own body strength and weight to suspend yourself in a number of different exercises. It’s tough, but apparently gets better/easier the more you go. Carly and I only did 30 minutes of the workout yesterday and we both can barely function. I literally cannot walk up or DOWN the stairs. Next week is a full hour of training. No pain, no gain, right? Pray for us.
I didn’t want all the energy and effort of working out to go to waste. Therefore, I am trying to eat (and now feature) some healthier and delicious recipes. This salad recipe has been on my radar for a long time. I absolutely love the Santa Fe Chicken Salad recipe at Earls Restaurant and I adore this copycat recipe. It’s one of my “go to” orders every time I dine there. The spicy/smoky flavour of the chicken, richness of the black beans and dates, combined with the sweet and sour flavours of the lime and peanut vinaigrette makes this a delicious, guilt free dish.
Chicken Enchilada
Claudia not only cooks fantastic recipes that were passed down to her from her mother. She also has a great vault of recipes that she received from friends and coworkers. This recipe was given to Claudia a long time ago by her coworker (and my former boss) Barb. I’m not sure if this is a Barb original, or one that was passed along to her. Either way, it’s delicious enough that me and Claudia had to share it with you.
Now like most recipes featured on this blog, this isn’t necessarily the healthiest. There is a lot of cheese. I mean a LOT of cheese. However, you can make your own low-fat modifications on each ingredient to make it less artery clogging. We’ve used part skim cheese, whole wheat tortillas and low fat mushroom soup in this blog rendition. It still turned out amazing. We hope you give this one a try – even if it is on a “cheat day”.
Chicken Fajitas
I have absolutely no idea where Claudia got her Mexican cooking skills from. This recipe is one of the many dishes that has wowed not only my family, but my friends as well. I would be lying if I didn’t admit that there were a few times during my younger years when I would come home from a fun evening of dancing with my friends and we would search my parents the fridge to see if there were any leftovers. On the instances where we found Chicken Fajitas, we felt as though we had won the lottery. This dish is a very healthy and delicious addition to anyone’s dinner repertoire.
Nasi Goreng
First off, we want to say a big thank you to those who follow our lovely blog on Facebook and Twitter. We really appreciate all the comments and support! The comments inspired the next few recipes that we will be sharing on our blog. As the temperatures continue to cool down (well, unless you’re in Los Angeles), we asked our readers what their favourite meals are in the autumn season. The theme was easy to pick out – simple, warm and comforting.
Claudia and I thought her Nasi Goreng was the perfect mix of all those elements which our followers love in a recipe. Hearty wild rice, warm curry flavour, and buttery chicken. What more could you want on a cool autumn evening….besides a blanket that is.
